First things first: Laverbread isn’t actually “bread.” And secondly, what is “laver?” Laver, or “lawr” in Welsh, is a type of seaweed collected off the Welsh coast. It’s characterized by slender, flat fronds that are a reddish-purple and green hue that turns black upon drying. Laver is considered such a delicacy that it has also been called “Welshman’s Caviar” and “Black Gold.”

After being boiled for hours, laver turns into a black pulp, and that pulp is called “laverbread.” The Laverbread (seaweed pulp) is often used to make lavercakes, which are patties formed mainly of oats and Laverbread. The patties are then fried. Laverbread can also be fried and eaten on its own, spread on toast, added to cawl, or in many other recipes.
